Abstract
The vine (Vitis vinifera L.) is a bushy perennial plant with a high commercial value of its products. The main products of the vine are table grapes, raisins, wine, grape juice, concentrated must and vinegar. Other products, which derived from winemaking residues or viticulture, are vine leaves for culinary use, tartaric acid, grape seed oil. The most important compounds found in grapevine products are carbohydrates, organic acids, nitrogenous and phenolic compounds, flavonoids, anthocyanins and tannins, with significant benefits for the human body. In Kefalonia island, Robola is the main cultivable variety (approximately 3,500 acres). The most important product is the white dry wine, thin, fruity and light named "Rombola Kefalonia", which is ranked among the three noblest varieties of the Greek vineyard. Its compounds show antioxidant and anti-inflammatory effects. In the present study, due to investigating the best combination of robola biotype, a significant number of grape samples from the experimental organic vineyard of robola, were studied, in terms of its viticultural characteristics, during the last phase of their ripening. In this work, the number and weight of grapes, as well as the volume of juice (must) of the samples are collected. The number and weight of gigaters they contained are examined, as well. The chemical characteristics of grape must (active acidity - pH, content of sugars and total acidity) are detailed studied. The results of different biotype combinations showed a similar behavior for the different ampelographic characteristics.
