Abstract
ABSTRACT If there is one thing that has characterised the dietary habits of recent years, it is the increasing tendency for more and more people to turn to plant-based foods. An important ally of this change is the continuous introduction of novel foods into the market, with the ultimate aim of improving living standards and promoting health. An emerging product of plant origin that is gradually spreading globally are microgreens with data so far referring to a “super food”. Microgreens are aromatic herbs, also known as Microgreens, which are in the first phase of their development, between the vegetation and the appearance of the first leaves. They have a rich flavor and offer a welcome hint of color in a variety of dishes. Despite their small size, they accumulate a high level of nutrients compared to the more mature vegetables. It is generally accepted that they are beneficial not only because they provide the necessary nutrients for the human body but also have significant health effects. The first chapter highlights the nutritional value of microgreens and especially of some key species used. The next chapter focuses on the nutrients of microgreens as well as the analysis of some basic vitamins. Finally, analyzed the safety of microgreens in both production and cultivation.
