Abstract
The study of lactic acid bacteria is a particularly interesting and important field of research as it has been shown that they exhibit important properties that can be exploited for the benefit of humans in various ways. Therefore, in the present study a first attempt was made to highlight the probiotic potential of strains of oxygalactic bacteria isolated from Kefalonian white cheese. Specifically, the survival of the microorganisms in vitro in the presence of acids (pH 2.5) and bile salts (1%), their possible haemolytic activity and their possible antimicrobial capacity against food-borne pathogens were studied.Subsequently, other strains of oxygalactic bacteria were selected and used in tests concerning their ability to produce biosurfactant substances. In this case, the aim was to find strains capable of producing biosurfactants which provide important properties such as surface tension reduction, emulsion formation and, due to their properties, are of great interest to industry as they can be used in a wide range of applications. In the present study, the strains studied during the screening process were shown to be able to produce biosurfactants on synthetic glucose substrate as well as on whey substrate.
