Abstract
Plant-based diets are increasingly consumed around the world. In particular, the vegan diet is characterized by the exclusion of all foods of animal origin. The reasons that push people to adopt this model are mainly ethical, hygienic and environmental. A vegan diet, if well balanced and varied, can help achieve and maintain optimal health. However, this dietary approach, if not well balanced, can cause deficiencies in protein, omega-3 fatty acids, iron, vitamin D and calcium, zinc, iodine and, above all, vitamin B12. Nutritional supplements, especially fortified foods, are recommended in these cases to correct nutritional deficiencies. A vegetarian diet generally reduces the risk of developing chronic non-communicable degenerative diseases such as Metabolic Syndrome, cardiovascular disease, stroke, atherosclerosis, diabetes, cancer and, in addition, requires less natural resources to produce food than food. The purpose of this review is to analyze the potential impact of the vegan diet on the protection of human health and the environment.
