Abstract
In the present essay, the ability of freeze-dried, with and without apple fibers, probiotics to survive in adequate amounts incorporated into baby food during one month of storage, was evaluated. The probiotic strains used, were L. casei ATCC 393 and L. plantarum 2035. The results showed that L. plantarum is more resistant than L. casei. Specifically, during storage, free L. plantarum was reduced by 75% while with apple fibers, it was reduced by only 5% and free L. casei during storage was reduced by 83% while with apple fibers it was reduced by only 16%. Regarding the infant food mixtures, L. plantarum in the infant food with 0%, 1%, 5%, 10% apple fibers, showed a reduction of 27%, 10%, 9%, 6% respectively. Similarly, L. casei in baby food with 0%, 1%, 5%, 10% apple fibers showed a reduction of 9%, 20%, 20%, 16% respectively. Probiotic infant food mixtures with L. plantarum with 5% and 10% apple fiber maintained viable cell counts at over 106 cfu/g of prepared infant food. In particular the infant food with L. Plantarum and 10% apple fiber contained 6.98 log cfu/g of ready infant food and was the highest value recorded. For the production of probiotic baby food, further research is needed in order to increase the viability of probiotics during storage.
