Abstract
In the present research, ayran is presented as a dairy product, not so popular in our country, which is a liquid drinking yogurt with salt. Some data on its origin, world production and consumption, and the different types of ayran produced are also mentioned. Some of the benefits it provides to the human body through its consumption, as well as some of the benefits provided by the consumption of cocoa powder, almond flour and ginger powder are also presented. In this research a discrimination test (duotrio) group of 19 - 20 individuals. Addition of certain concentrations of cocoa powder, almond flour, and ginger powder in ayran was occurred. The characteristics evaluated through relevant forms based on the hedonic 9-point grading scale, concerned the following: taste, texture, odor, color, and overall acceptance. The research was based on descriptive sensory evaluation. The highest overall acceptance of cocoa samples was this with 3% w/v in cocoa. The sample with 8% w/v almond had the highest overall acceptance of the ayran samples with almond. While, from the samples of ayran with ginger, the highest overall acceptance was the pure sample of commercial ayran.
