Abstract
The purpose of this thesis was to create an innovative cheese product that will meet the dietary and nutritional needs of the modern man, but will also be part of the Circular Economy. More specifically, in this study the production of cheese that will contain lower fat content and will be enriched with other nutrients, such as proteins, was investigated.
