Abstract
The Mediterranean diet is a model diet, since numerous studies have demonstrated its contribution to the maintenance of good health and the prevention of degenerative diseases. Nevertheless, the influence of Western pattern diets is resulting is an increasing expulsion from the Mediterranean model. In this thesis the ambition is to gather current information on the Mediterranean diet in a ‘dynamic’ way, i.e. in relation to the latest research on its components, specifically on its lipidic components. The aim is to highlight the importance of the lipidic components of the Mediterranean diet in promoting and maintaining the health of the human body, due to the composition of the Mediterranean diet and its beneficial components in health education as well as the dynamic it has in trying to change Western life and dietary patterns according to the Mediterranean model. Nonetheless, in recent years there has been a growing concern from the field of food chemistry and product safety about the presence of some fatty acids in food due to the harmful effects observed on human health during consumption. These fatty acids are produced from fatty substances of either animal or plant – based origin. Therefore , a review is required that aims to fully determine the production of good and bad fatty acids , their detection , quantification as well as suggestions for minimizing bad fatty acids from foods. In conclusion, the literature review generally focuses on the formation of fatty acids, on their main sources in the human diet, on their chemical and biological properties that affect human health, the methods of detection of these fatty acids and the regulatory approach to control the content of fatty acids in foods.
