Abstract
The phenolic compounds of wine posses antioxidant properties, which makes them valuable components of the diet. Apart from the wine itself and the grapes, by-products of winemaking, they contain a significant amount of phenolic compounds. In this thesis, the variation in the concentration of total phenols, as determined by the Folin Ciocalteu method, in grape marc from different combinations of underlying clones of the Robola Kefalonia variety is studied. Results from the comparison between the different rootstock-robola clone combinations showed that the concentrations of total phenols in grape seeds had no statistically significant differences between them.
