Abstract
The food crises of the last decade have awakened all the stakeholders involved about food safety. Food Traceability throughout the supply chain, "from field to plate", is provided as an important safety and quality tool. The first part of this paper cites the concepts, the definitions, the current legal status, the processes, the technologies of an intergrated Traceability System as well as the future and the market and technology trends. The second part presents the implementation of a Food Traceabilty system in a modern ready-to-eat food production facility.
