Abstract
The present thesis presents the investigation of the effect of the harvest time on the quality characteristics of the olive oil of the wider area of Andritsaina Prefecture of Ilia for the olive growing season 2019-2020. The bibliographic part of the thesis is a source of valid information for those interested in the process of olive production and olive oil and is necessary for the evaluation and interpretation of the results of the experimental part. The theoretical part includes information about the ripening factors of the olive fruit, the chemical composition of the olive oil, its organoleptic characteristics as well as the variation of these based on the time of harvesting the olive fruit according to Greek and international literature sources. The experimental part of the work includes analyzes of olive oils from olive fruit collected at three different stages of ripening. The acidity, peroxides and K and ΔK indices were determined. In parallel with the collection of the samples, information was also collected about the cultivation, harvesting and olive oiling practices applied in the wider area, through questionnaires filled in by the olive producers from which the samples came. The results from the chemical analyzes of the samples as well as from the answers to the questionnaires, showed that the levels of acidity and the values of the indices K and ΔK, as will be analyzed below, are similar for all three olive growing seasons examined, which leads at export that all samples were of the same quality. The values of the results of the experiments carried out testify to the good quality of olive oil produced in the wider area of Andritsaina, since they classify it in the category of virgin olive oil.
