Abstract
Grapes, in our country, are one of the most popular fruits. It can be eaten fresh or used as a raw material for the production of various products such as wine, grape juice, must and raisins. Grape by-products also have many applications in the food industry. In addition to its delicious taste, it contains various bioactive compounds, which offer a variety of health benefits. Despite all its beneficial properties, there has been much concern about postharvest diseases of grapes, mainly from fungi, not only because of the losses they cause, but also because many of them produce mycotoxins, posing a long-term risk to human health. The first part of this thesis focuses on the pathogens that cause postharvest diseases in grapes, the effects of the presence of postharvest diseases on both the product and the consumer, and ways to deal with them. The second part aims to isolate and identify the main pathogens causing postharvest diseases in grapes from Kefalonia and imported grapes from South America for comparison. Among the fungi isolated, the species with the highest frequency of occurrence were Penicillium spp. and Aspergillus spp. (in 83% and 67% of the varieties, respectively). Alternaria spp., Botrytis cinerea and Rhizopus stolonifer developed in 50%, Aspergillus ochraceus in 33% and finally Fusarium spp., Phomopsis spp. and Cladosporium spp. were isolated in 17% of the varieties tested. It is impressive that all 7 of the 8 species identified developed on the grapes of a rare, late Greek variety, Eptakoilos.
