Abstract
Hydroxytyrosol is an amphipathic phenol with antioxidant properties. As a natural compound it can be found in olive leaves and olive oil as well as from the processing of olives, in oil and mill waste water. The main natural source of hy-droxytyrosol intake through food is olive oil. Due to its bioavailability, chemical properties, easy synthesis as well as lack of toxicity, hydroxytyrosol is considered an excellent dietary supplement by the food industry and the pharmaceutical in-dustry. The purpose of this paper is to discuss both the potential therapeutic ef-fects of hydroxytyrosol and the effects on food preservation and fortification. Hy-droxytyrosol has been found to have anti-inflammatory, anti-cancer, antiviral, an-tibacterial and cardioprotective properties. Due to all these biological properties, hydroxytyrosol is currently the most actively investigated natural phenol. The da-ta presented, identify the great potential for the use of hydroxytyrosol in the pharmaceutical and food industries.
