Abstract
Although essential oils have been researched for hundreds of years, EOs are still of interest to the scientific community due to their multiple beneficial properties in human health. Their chemical composition consists of 2 main categories, terpene and non-terpene hydrocarbons. Main purpose of this dissertation is to study and research the chemical composition of oregano essential oil originating from the territory of the Ionian Island of Kefalonia. The extraction of the oil was conducted with hydrodistilation of the actual oregano plant.Following the extraction of the EO, was its analysis by the method of gas chromatography-mass spectrometry (GC-MS). Following the analysis, the substances contained in oregano essential oil were detected and identified and its composition was compared with the results of the international literature.Specifically, all 16 substances detected through the analysis method were successfully identified. According to the results, the predominant compounds that emerged, in order from the highest to the lowest concentration, were Carvacrol, p-Cymene, γ-Terpinene, Caryophellene and Thymol.
